One for the smaller items that you'll be using for everyday cooking, and a larger one that can be used for the various types of meat you'll be cooking with. One of my favorite things about these spatulas is how thin the spatula is. It's able to get under any food surface with ease. Another great feature is how light these spatulas are. You're able to hold the spatula with so much ease, and it's all one piece. Something that's great too is that the openings in between the spatula allow for any drippings to fall through. So you don't have to worry about picking up too much grease when you're taking it off of a sheet pan or out of a pan. I absolutely love my Gourmet EZ Fish Spatulas. And that's my point of view.
